Grown on a bloody steep hillside in Coldstream in the Yarra Valley, this is really sophisticated Aussie Pinot. The aromatics of red cherry, strawberry and spice are underpinned by savoury, herbal notes. The palate is beautifully composed with fine, chalky tannins and freshness. We try to avoid making the comparison, but this does have a Burgundian vibe.

Having come from a family steeped in winemaking history, German-born Timo Mayer established his Yarra Valley winery in 1999 after working vintages in Europe and Australia. He quickly earned a reputation as one of the country's most distinctive producers. Timo crafts small-batch wines Pinot Noir, Chardonnay, Syrah and Riesling with a focus on minimal intervention and whole-bunch fermentation. His wines are renowned for their perfume, energy, texture and precision.
