This is very very well composed Chardonnay. It’s beautifully silky in texture, and generous in flavours of nougat, fennel and peach with mealy, savoury notes. For all its generosity, there’s a fine and fresh line of acidity. Hand harvested fruit was pressed and settled before racking into large format French oak for a wild yeast fermentation and malolactic fermentation with aging on lees.
