Mal Bien Coyote is a distinctive mezcal made from a naturally occurring agave hybrid found in Miahuatlán, Oaxaca. Here, Coyote is the name given to these unusual hybrids, with this one bringing together Madrecuixe and Tobalá. Victor and his son Emanuel Ramos, the third and fourth generations of their family to make mezcal, use 12-year-old agave to produce this mezcal. It is pit-roasted, tahona crushed and double distilled in copper pot stills. Smoky and earthy, with ripe pear, roasted fruit, tobacco and toasted nuts. Full-bodied without being heavy, it has a long, warming finish.
Mal Bien works with independent mezcaleros across Oaxaca, seeking out distinctive agaves and traditional producers to showcase the incredible diversity of Mexican agave spirits. Rather than making mezcal in one central distillery, they work closely with producers who have their own methods, traditions and relationships with the agave. The result is a range of small-batch mezcals that gives a real sense of the people and places behind each bottle.
