Precise and energetic, this is about as elevated as Crémant gets. Green apple, preserved lemon, quince and fresh pastry aromas lead into a palate that balances creamy texture with vibrant acidity and a distinctive chalky, saline finish. Dry, crystalline and beautifully poised. Produced from organically farmed Chardonnay and Savagnin grown on the limestone and clay-limestone soils of Rotalier in the southern Jura, the wine is made by traditional method with whole-cluster pressing, native yeast fermentation and extended lees ageing. After seven months on lees in tank and a further 18 months on lees in bottle.
Domaine Labet has emerged as one of the Jura’s most compelling modern voices, combining deep-rooted tradition with a quietly radical, terroir-first approach. Based in Rotalier in the southern Jura, the late Alain Labet pioneered the region's shift to site specific wines in the 1970s. Today the family work their 13 hectares of vines organically and focus on site expression through meticulous vineyard work and low-intervention élevage. Labet’s wines tend toward purity and tension, often vinified ouillé rather than in the region’s more oxidative style, though always with a subtle nod to Jura identity.
