An absolute classic as far as dry, complex sherry goes. It's got it all going on - flavours of salted almonds with the tang of green olives, and a little palate weight to boot. Manzanilla is produced around the town of Sanlucar de Barrameda, in the south of Spain. It's proximity to the sea is said to impart a saline quality that begs for anchovies.
