Gilbert Picq has long been an undervalued gem in Chablis. The estate has been in the hands of Gilbert's children Marilyn, Didier and Pascal since 1976. Their 13 hectares are in the commune of Chichée, upstream from the town of Chablis and the grand crus in the Serein River Valley. The Picq's are working towards gaining organic certification. The use of sulphur is kept to a minimum and only natural yeasts are used. There is no use of oak, with all fermentations and ageing carried out in stainless steel.
