Finely tuned, with citrus, oyster shell and ripe apple aromatics, this is the kind of fresh, pure and classic Chablis we love. There's nice density inthe palate, with a chalkiness on the finish. Organic, estate grown fruit from four parcels was hand harvested and wild fermented. The wine was aged in glass lined tanks. 

Bernard Defaix established his domaine with w hectares in 1959, growing it to what is now 27 hectares encompassing Premier Cru, Village and Petit Chablis holdings. Now run by Bernard's sons Sylvain and Didier, the estate is organically certified and practicing biodynamics.
