Alice and Olivier de Moor Belair-Clardy Chablis 2022
Highly sought after, this displays the racy, fresh precision you’d expect, but has more body, bees waxy texture and depth of flavour than most Chablis. Belair and Clardy are two of Alice and Olivier's original vineyard plantings, both on Portlandian limestone soil.
Having met working together at a larger Chablis domaine, wife and husband Alice and Oliver de Moor began planting their own vineyards in the region in 1989. They quickly gained a following, and their production (which is still relatively tiny) has grown to include vineyards in Chitry and Saint-Bris, just outside of Chablis. All vineyards are managed organically, and all fruit is hand harvested. Fermentation occurs with wild yeast, and ageing is in 1 to 4 year old oak. Sulphur additions are kept to a minimum, just at bottling.
