Cava is THE sparkling wine of Spain. Stylistically it sits closer to Champagne than Prosecco, made in the same method and with those toasty/brioche aromatics and fresh, dry finish. Parés Baltà’s Brut NV is true to form, and organic to boot. While Cava can be produced across Spain, most (including this one) are produced in Penedès from the traditional varieties Parellada, Macabeu and Xarel·lo.
Now into their third generation of wine growing, the Cusine family have become synonymous with organic and biodynamic farming, and their ability to scale it. They make an expansive range of wines using the indigenous grape varieties of Penedès, near Barcelona in Spain’s north east.
