Breaking the rule that rosés should only be drunk fresh, Apostolos Thymiopoulos creates a rosé from Xinomavro grapes that has great ageing potential. Spontaneously fermented, aged in large format oak for 4 months, unfined and unfiltered this wine is complex and on a different plane to your typical Rosé. It has an expressive nose with aromas of strawberry jam and sweet cherries, along with a palate that is both vibrant, structured and persistently fruity. A rosé that just gets better the longer you can hang on to it. 

For generations the Thymiopoulos family have been growing Xinomavro (pronounced See-no-mav-ro), the indigenous grape of the highly regarded Náoussa zone in Greece’s far North.
