Patrick Piuze Chablis Plateau Cornasse 2021
The purity of nervy, racy Chardonnay off the Kimmeridgian limestone soils of Chablis is one of the wine world’s greatest hits. While this wine, made from fruit grown in Beine on the west side of Chablis, stays true to form, it has a gentle softness to the texture and a riper fruit profile. It was slowly fermented and then aged entirely in stainless steel tanks.
Patrick Piuze has quickly become a rising star in Chablis. Having worked with some of Burgundy’s best (Olivier Leflaive, Verget and Jean-Marc Brocard) he started working as a micro-negociant in 2008. Now sourcing fruit from 20 hectares around Chablis, including Premier and Grand Cru vineyards, Patrick is passionate about expressing the nuances of terroir from village to village in the region.
