This is nuttier and more complex than regular Manzanilla but it keeps its saline edge. There’s ethereal, floral notes too. In the palate, it’s explosively powerful and rich with amazing freshness and length. Made from Palomino, it was kept under flor for 10 years (making it Manzanilla Pasada) with aging in topped up barrels for a further 5 years.
Equipo Navazos was started in 2005 when a group of Sherry lovers stumbled upon 65 bota (barrels) of exceptional sherry being safely stored at a bodega. They decided to purchase and bottle them. From there the project has grown into something with a cult following when they made the sherries available commercially in tiny quantities. It’s led by Jesús Barquín, a professor of criminology and sherry expect, and Eduardo Ojeda, the technical director of another Spanish winery. Drawn from several bodegas these select parcels of unique sherry are truly one offs and are numbered successively. They're as rare as hens teeth so get amongst it. They've always, truly excited us.
