A delicious curiosity with incredible depth - apricot, honey, hot stones, wood smoke, and sea spray. It has a density of flavour and a chalky line of acidity. Grown on Tenerife, in the Canary Islands off the coast of Morocco, bush vines cling to windy, exposed slopes. The variety Listan Blanco (otherwise known as Palomino in Spain) is hand harvested, foot stomped, fermented with wild yeast and aged in large format oak and concrete tanks. 40% of the wine is aged under flor bringing a lovely salty, oxidative edge.
Envínate is the brainchild of 4 friends, winemakers Roberto Santana, Alfonso Torrente, Laura Ramos, and José Martínez. This gang of 4 formed back in 2005 while studying enology at the University of Miguel Hernandez in Alicante, Spain. Upon graduation, they formed a winemaking consultancy, which evolved into Envínate, a project that focuses on exploring distinctive parcels mainly in the Atlantic-inflected regions of Ribeira Sacra and the Canary Islands. No chemicals are used in any of the Envínate vineyards, all parcels are picked by hand, the grapes are foot-trodden, and the wines are fermented exclusively with wild yeasts. These are some of the most exciting and honest wines being produced in Spain today.
