Cesar Florido Fino Sherry 375ml


Forget that sweet sherry your grandparents had on the go in the early evening, this is Fino, the lightest and driest of sherry styles. Oxidative aging means this is savoury in flavour - nutty, like dried almonds, with a gentle saline edge. There’s mouth watering freshness here too, making it soooo foodie - think anchovies, cured meat and flame grilled fish. The variety Palomino is grown on the chalky white Albariza soils by the coast. After fermentation and fortification the wine is aged in barrel under flor (a thin layer of yeast naturally protecting the wine from too much oxidation) for 3 years.

Cesar Florida is a 5th generation sherry producer based in Chipiona, on the West Coast of Andalucia in the heat of the south of Spain. They are closer to Sanlucar de Barrameda than Jerez, so their sherries exhibit a pleasant saline character similar to Manzanilla.
