Flavoursome and complex, this obscurity is a treat from Gaillac (pronounced guy-yak) in the south west of France. Stone fruit and green apple aromatics are woven with nutty, beeswaxy complexity. To taste it has dense but fine texture, with lengthy freshness to finish. You may not recognise all the varieties in this blend (Mauzac, Loin de l’Oeil, Muscadelle, Chenin Blanc and Semillon), but it’s definately worth becoming familiar with a few glasses of it.
Patrice Lescarret of Causse Marine learnt how to make wine in Bordeaux, arguably the centre of the winemaking establishment in France. Thinking for himself and outside of the square, he bought a small vineyard in Gaillac, a neglected and relatively unknown region near Toulouse. From here, he and some of his wine growing mates are committed to championing local varieties and biodynamic farming.
