Now this is a treat. Txakoli (pronounced chock-oh-lee) is a fresh, light, dry white with a lively spritz. As a wine style, it’s the sweetheart of the distinctive Basque region in northern Spain, bordering France. With flavours of citrus, green apple and fennel, its signature effervescence and crisp finish, we’ll be slurping on this all summer. 

Made from the local grape variety Hondarrabi Zuri, following fermentation the wine is bottled quickly to preserve the natural effervescence. For a bit of a show, albeit a no nonsense one, check out old mate here, pouring it from a height as is traditionally done in the region. And hey, why not have a go yourself.
