These distillates are a delicious and sophisticated addition to soda, tonic water, or in your next mocktail. Locally foraged ingredients are distilled at low temperatures, capturing water soluble compounds so that the essence of each ingredient is beautifully preserved. 

This was created using Waikato Horopito with a complex blend of peppery, citrusy botanicals. We love this with tonic water.

Founded by Michael Hanna in 2023, Project Hydrosol emerged from years of curiosity and passion for culinary excellence. Having earned his accolades as a sommelier at Auckland’s top-tier dining establishments, Michael became frustrated by the uninspiring alcohol-free offerings available. Delving into the intricate world of ferments and distillates, and utilising his finely-tuned palate and technical curiosity, he’s created groundbreaking products that are now used in some of New Zealand’s best restaurants. Ingredients are sourced by foraging or using the by-products of winemaking and distillering to create unique and exciting flavour combinations.

Project Hydrosol is currently using a fully circular packaging program for all customers. This means that every container delivered is intended to be returned and/or reused.
