François Raveneau Chablis 1er Cru Foret 2018
The wines from the Premier Cru Foret are usually tightly wound in their youth. In the hands of Raveneau, and with the benefit of 6 years of age, this has opened up beautifully, with crystalline purity. Foret sits on the left bank of Chablis, and faces to the south east. Fruit was hand harvested, wild yeast fermented in stainless steel tanks, before ageing for 18 months in 7 to 8 year old, seasoned oak.
Wines as rare as hens teeth, this is the most celebrated, revered domaine in Chablis. It was established by Francois Raveneau in 1948, merging vineyard parcels he inherited with those of his wife, a Dauvissat (another revered producer in Chablis). The production is tiny, with small holdings in 3 Grand Cru and 6 Premier Cru vineyards. Francois died in 2000, and the estate is now run by his sons, Bernard and Jean-Marie. They continue to uphold their father’s philosophy and legacy in the vineyards and cellar.
