Eric Bordelet is the man who made the wine world think seriously about cider. His ciders grace the greatest wine lists in the world, and are an absolute benchmark. After a stellar career as Head Sommelier at 3 Michelin star restaurant L’Arpege in Paris, he moved back to his family orchard in Normandy. He was greatly encouraged and supported by Loire Valley legend, the late Didier Dagueneau. Bordelet has quickly made a name producing cider with the same considerations as wine, considerations like terroir, variety, vintage and age. His fully certified biodynamic orchards of heirloom apple and pear varieties grow over a bedrock of schist and granite.
