Not only is this a blend of 20 different heirloom varieties of apple, the fruit is given 3 to 5 days of maceration with the skins before being fermented. We’re talking serious extraction that amounts to serious flavour and depth. It’s left with a gentle amount of sweetness and it takes tasting cider to a new level.
Eric Bordelet is the man who made the wine world think seriously about cider. His ciders grace the greatest wine lists in the world, and are an absolute benchmark. After a stellar career as Head Sommelier at 3 Michelin star restaurant L’Arpege in Paris, he moved back to his family orchard in Normandy. He was greatly encouraged and supported by Loire Valley legend, the late Didier Dagueneau. Bordelet has quickly made a name producing cider with the same considerations as wine, considerations like terroir, variety, vintage and age. His fully certified biodynamic orchards of heirloom apple and pear varieties grow over a bedrock of schist and granite.
