With its establishment in 1994, Sullivans Cove embarked on a path that defied convention and showcased the potential for whisky production in unconventional regions. Tasmania, the distillery's home, offered a unique environment with pristine water sources, fertile lands, and a climate conducive to maturing whisky. In its early years, Sullivans Cove faced skepticism and hurdles as they sought to establish themselves in an industry steeped in bias and tradition. They focused on small-batch distillation and utilising locally sourced ingredients like Tasmanian barley to overcome these challenges. 

The distillery's breakthrough came in 2014 when their Single Cask French Oak Cask whisky was awarded the World's Best Single Malt Whisky at the World Whiskies Awards, catapulting them into the global spotlight. As a pioneering Australian distillery, Sullivans Cove has played a pivotal role in challenging the notion that exceptional whisky can only be crafted within the traditional confines of Scotland. Sullivans Cove whiskies are matured in a variety of cask types, including American oak, French oak, and port casks, allowing for a diverse range of flavour profiles and complexities.
